Welcome aboard! lots of good info on the site.
The taps change just like those in home plumbing. The connectors are normal that you can find in the stores like Home Depot or Lowe’s. Depending on what the previous owner did, you may or may not need adapters to get the connectors compatible.
As you observe, access to those fixtures and many other things on the boat have terrible maintenance accessibility. Do you know a mechanically inclined contortionist that you could bribe with adult beverages?

I have had our 40.5 for 23 years and in the course of ownership, I contemplated changing the faucets. However, it was low on the priority list. Once, I decided to change the cartridges. But when I saw how heavy the construction was and the quality of the plating of the OEM faucets, I decided to keep them. In any event. you will need a big mirror and a basin wrench to do the job, and probably remove some of the shelves too. basin wrench

Welcome to the forum, @didiercat . I did this job on my former Catalina 36, and it is a real pain to get between the sink back and the molded fiberglass. Moving from a double-tap to a single control handle was worth it, particularly for water conservation. Basin wrench will help with tightening the final connections. Some people have actually cut out fiberglass panels for access, if it is normally covered with cushions on the other side, or even remove the sink and re-install, which is how that faucet was originally installed by Hunter. Just a thought that you may need to make some access.

The aft head shower is very easy. Just grab the lip under the faucet and pull. The sink faucets in both the aft and forward head require getting your hands in small spaces, but I think it sounds worse than it is. The galley sink issue is working behind the sink, somewhat blind. I added a seawater faucet at the galley next to the freshwater faucet without major issues.
