I have an electric centerboard winch that operates from the main saloon, and I am planning to remote the operation to the helm position. The thing I would really like is some indicator that would show how far down the centerboard is. Does anyone have a method to be able to do that?

It all depends on how much access you have to the lifting mechanism.
things that come to mind:
a winch drum rotation counter.
a centerboard pivot indicator.
Paint on the cable to indicate how much cable has been recovered.
You could also just time the operation and then have a manual indicator to record it at the helm Something like a magnet that covers a part of a scale on the helm.
For what it is worth.

Sounds like...
a fuel tank float unit and a fuel gage would give you an indication of up and down (full/empty or vice versa).
After a couple days of thought, a Trim Tab indicater would make a better gage for this application than a fuel gage and should react to the same range of resistance the fuel sender uses.
