I am thinking about making some sort of extension to go across the sette berth to the couch on the starbord side so that can all be one large king bed so to speak. has anyone tried anything like this? I figure i can store the supports in the vberth when not in use. I am over 6' tall and my partner is 5'11. we find the vberth a bit too small. The the sette berth is not long enough as it comes to lock my legs straight.

Look into the Pearson p30 salon couch, you lift the foam, pull out a panel, that panel has a cleat at the bulkhead to support it. at the end there is a flip panel that has a folded leg, very stable and solid

And don't forget about this "couch potato!"

From the very first boats, this method was always workable.

So workable that I used it on my Catalina 22 and my Catalina 25. Didn't need it on my Catalina 34 because that boat has the BIGGEST V berth known to man, so big I could sleep fore&aft OR cross-ways.

Our Oday 25 came with slideout board from the port settee . It makes for a good size berth .
I am mounting a very long piano hinge on the starboard settee that will interlock with the existing slide out to form
a nearly queen size berth . We will sleep athwartship ( sideways)

We did that on two of our boats. Worked great!
We cut a piece of plywood to fit and used 4 or 6" open cell foam. No cover. It was a little hassle to have to make up and breakdown the berth but the sleeping was superb. The settees were too narrow for real sleep and a vee berth is like a prison cell to me. On the Ranger 29 it was an acrobatic exercise to get into or out of it.
The plywood rested on trim ledges on the settees. If yours don't have a suitable ledge you can mount a cleat on each side.
