"Traditional" Layout
I think what you are describing is the "traditional" layout - as opposed to the "dinette".There should be a table that attaches to the bulkhead just aft of the head. The table is folded up and pinned to the bulkhead when not in use, it is folded down, and a leg swings away from the table to support it when it is to be used. The setup in my previous C27 (1986) had a hinged top and hinged leg so that you could fold down a half width table, or upfold the top and the extra leg support and get the full width table. You almost couldn't walk forward when the full width table was deployed.One telltail sign might be a small (3/8") hole in that floor board you mentioned.
