This is probably not the way most would do this but I used Hydrotek BS 1088 marine ply and stained it with a min wax cherry stain and then Helsman spar varnish. It came out pretty good. I paid about $60 a sheet I think at a local place here in Ohio. I'm sure Hydrotek is available everywhere. I replaced only the two bulkheads on my C27 with the Hydrotek.
I just looked up the place I bought the Hydrotek from. It was $88/sheet at this time. Here's the website.
