I started out sailing extremely tender dinghies. The Zuma was so bad that at 10 years old I told the camp counselor that I refused to sail it. Plenty of capsizing when I was young made me pretty fearless today.
I managed to keep my 25' virtually flat in 15kts of wind yesterday by using just the main and no jib. We kicked back and basically let the boat sail itself with only minor adjustments

Worry not about a tender boat. The boat is a solid performer. Great boat to learn with. You get them started and they will want a dinghy or a scow. Something that goes like a bat out of hell and flipping over will be nothing but rewarding stories to scare their grandparents.
C&Cs generally want to have a jib.
As others have alluded, you can control heel by managing sail size and wind conditions. A smaller headsail will reduce heeling as will reefing. Often over looked is the effect of an old blown out mainsail, a boat with a new mainsail will heel less than a boat with an old blown out sail.

My O'Day definitely gets most of it's power from the jib. It sailed better with just the main the other day than I expected. Reefing one or both sails is another option
We viewed capsizing like we were going for a quick swim on a hot day. Sometimes we'd see how far we could push the boat and other times it was just for fun
I have sailed my C&C25mk2 for about 7 seasons. It is a great boat and has served me well. With an appropriate sail plan for the conditions, it comfortably settles into a 10-15 degrees of heel and with proper trimming and sail balance it will just about self steer as it settles into a groove. As stated by others, C&C's are genoa driven boats, although it happily sails with just a main. On the other hand, the other day I was feeling lazy and sailed on a 150 genoa (hank-on), with no main. The helm remained balanced, mostly on account of the large overlap and did not suffer from even a moderate amount of lee helm. (Winds were light, 5-7kts).
Generally speaking this boat is neither stiff, nor especially tender and settles into a groove pretty easily. It is truly a pleasure to sail.
My recommendation for a general purpose headsail (furler) would be a 130. In most conditions it will balance the main nicely and when the wind pipes up, reef the main and the headsail as needed to moderate your heel angle.
