Turkey breast on the magna; gravy, stuffing, and green beans on the cookmate; dinner rolls from the deli in town; and cranberrys from a can. Oh, almost forgot, Budwieser from the cooler. Merry Christmas everyone.

I have posted a recipe for a Betty Crocker Starlight cake. This is a very versatile cake that lends itself to flavoring with cocoa or spice.
Today i used it for an apple upside down cake and made the cake as a half recipe with spice.







INGREDIENTS
  • Cooking Time: 40 minutes
  • Servings: 12[*
    ]Preparation Time: 10 minutes[*
    ]2 1/4 cups all-purpose flour [*
    ]1 1/2 cups sugar

  • 1/2 cup butter or stick margarine, softened [*
    ]1 1/4 cups milk [*
    ]3 1/2 tsp. baking powder [*
    ]1 tsp. salt [*
    ]1 tsp. vanilla extract [*
    ]3 large eggs[
    DIRECTIONS

    Preheat oven to 350 F.

    Grease bottom and sides of rectangular pan, 13 X 9 X 2 inches, 2 round pans 9 X 1 1/2 inches, or 3 round pans, 8 X 1 1/2 inches with shortening and lightly flour.*

    Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly.

    Beat on high speed 3 minutes, scraping bowl occasionally; pour into pan(s).

    Bake rectangle 35 to 40 minutes, 9-inch rounds 25 to 30 minutes, 8-inch rounds 30 to 35 minutes, or until toothpick inserted in center comes out clean or until cake springs back when touched lightly in center.

    Cool rectangle in pan on wire rack; cool rounds 10 minutes; remove from pans to wire rack.

    Cool completely, about 1 hour.

    Frost as desired.

i made skittle scrapins for breakfast---
named by the neighbor i fed--LOL
corn tortillas cut into pieces and tossed into a pan with butter.. yeah, i am bad. you can substitute extra virgin olive oil for up to 3/4 of the burter. ye want the butter for flavor. brown the tortilla pieces. add dicedonion. garlic, stir until onions are translucent. add eggs and stir. cook to desired doneness. add cheese and salsa---yummm. cheap and good..i use salsa casera from herdez, or i make my own.--
tomkatoes, diced
onions diced
cilantro, minced
lime juice
serrano chile--i use one, minced.
2 cloves garlic, minced
mix together well in a bowl and let sit for 30 min , if ye can.(not a metal bowl. glass is bet, plastic is good. metal will flavor it.
taters diced would also be good in htis...

carmelize chicken,onions and garlic add hominy and stew......willlet ye know what i do with this after it is cooked down..is ok to throw in a lil beer.... never hurts with these soups and stews......

ok--as the dolts get slammed by cincy, i added hominy-2 cans , cut some cabbage into slices then sliced across those slices 3 times--
added some water to makethis a soup--- heated until cabbage limps well, and enjoy--is a caldo de pollo -- uit likes corn tortillas-- cut or torn into small bits and browned without any butter or fat, add to soup ....yummmmmmmmm




ross--i will get brave and try that cake in a cast iron fry pan........looks like a goood one for that mebbe....

Today I tried biscuits on the stove (Cookmate non-pressurized alcohol). Used a basic (cheap) biscuit mix with raisins added, cooked in a non-stick pan with a little EVOO. They actually turned out better than biscuits I've made in the oven at home. I've been reading up on bannock bread and scones. I'll try variations of these next.

tried brownies again-- got them to come out less charred than last time-- i had heat too high--impatience again!!!so i have a nice pile of chocolate stuff to have with coffee..LOL...like kids again..lol... they come out ok if one has patience and a very low flame.....

peggy--i post my failures a s well as my goodies.....so other dont make the mistakes..LOL

ross-- do they have those in 99 cent stores>?? or in some secret locale?? might be a good idea as long as i am cooking on this THING instead of a real stove. spozed to change out stoves withmy ericson-- have force 10 there an a galleymaid here... wanna SWAP..lol....am USING coleman..LOL

Zeehag I don't know where to get them new. I found a couple in antique sale barns. I will do a search and see what I can turn up. Those are great, Ican simmer split pea soup on a gas burner and not have it stick.

Today was baking (stove top) day on the boat. I made a cheese and raisin pan biscuit and several pieces of bannock bread. Recipe for bannock bread is 3 cups flour, 2 T baking powder, 1 t salt, 1/4 cup olive oil, and 1&1/2 cup water. This made 4 pieces like the one shown. The cheese biscuit was excellent with jelly for breakfast and I am waiting for the bannock to cool to have with lunch. Pictures are of the bannock bread.

OK guys, it's time for a really quick soup that eats like you slaved for hours over a hot soup pot.

Vegetable beef soup is the nom de fare tonight so here goes:

Brown a couple of pounds of stew meat (beef) in EVOO and BUTTER till brown
Add a Large chopped onion, garlic (as much as you want), cracked black pepper, salt to taste, 4 or 5 diced stalks of celery and one can of Campbell’s French Onion Soup - cook all this slowly covered until the meat starts to get tender:

At this point add a large can of diced tomato's (Give me a break, I'm single and cook the easy way) a LARGE package of frozen mixed veggies (stew cut if you can find them) WITHOUT POTATOES (I'll explain later why) and a 40 oz can of DEL MONTE tomato juice and a couple of cups of water to thin

You are almost finished - the LAST thing to add is a whole medium size head of chopped green cabbage. This looks like a massive amount at first but trust me, it will cook way down.

Let soup simmer for a couple of hours. Eat with mexican cornbread.

Now why no potato's - They DON'T freeze well in this soup - if you want to add some, boil some diced red potato's and add to your bowl of soup

Enjoy. If you have any left, freezes well.

Have you ever tried to make a small pot of soup.
Cut up and brown a piece of meat as big as the palm of your hand, add an onion chopped, some celery and a small carrot, cook for ten minutes with the lid on add two cups of water or stock and a diced potato, cut up a tomato and add that. Get out a bigger pot there is more to come. Shred some cabbage and add that to the pot ad some green beans and corn, a few lima beans, salt, pepper bayleaf, maybe some rosemary. Cook until the potatoes are done and fill two soup bowls, figure out where to put the rest. enjoy.

Going traditional .. smothered cabbage, black eyed peas for good luck in the year; roast beef (injected with garlic and butter seasoning), potatoes, and carrots .. Family and friends are going to be over..

sounds yummy , guys-- HAPPY NEW YEAR!! may this year be better than last year was-- for me, that is a lot to ask for, save the loss of a friend-- i miss that man very much-- is difficult to go thru a lot and not have that soul as a friend after.....new page, new chapter, new book--excelsior!! life changes-- let's celebrate!!:dance:

hamhock soup

good basis for any bean soup
2 hamhocks
3 carrots
3 celery
' 1 large onion
3 garlic cloves
oregano--pinch
bayleaFx2
i also throw in a pinch of the pozole seasoning
cook this together for as long as it takes to get the meat to falloff the bones. can be pressure cooked. i pan cook as that warms the boat.
separate out the bones aand use as a stock or base for beans, beansoup, veggie soup,many items with which hambone soup works.
