What is the preferred bedding compound for installing winches, instruments, and deck hardware?

Polysulfide

Polysulfide (eg. LifeCaulk) is my choice for bedding everything you listed. Use acetone to clean up any mess-ups. For some reason, polyurethane (eg. 3M 5200) is a boater favorite, although every expert I've heard from says DON'T use it on anything you might ever want to remove again. Polyurethane is a powerful adhesive as well as a sealant and it's a major PITA to break the bond. Marine silicone should be used to seal windows and for nothing else. Just my $0.02. Good luck!

Lifecaulk here too!

I have used Lifecaulk for as many years as I can remember. It holds up very well and does the job that I want. I use fasteners to hold my hardware and prefer not to GLUE it down with 5200.

I Always use Lifecaulk

I have always used Lifecaulk for a bedding. Did 3 ports and 2 skylights. Currently installing new speed & depth transducers and Lifecaulk was used in the original, factory bedding of the old ones.

3M 4200

I use 3M 4200 - this is what you want to use - unless you want a permanent bond (use 5200 for those ever lasting seals)

Article in Boat US Seaworthy

I just received the April 2006 edition and it has a good article about the three different types of bedding material. They say that Polysulfide has far better adhesion than silicone. Once cured, polysulfide can be sanded and painted. Leaks start when it dries out and begins cracking. Expect 8 to 10 years life.

5200

I just removed a few old ports that were bedded with 5200. If you use a heat gun it comes apart pretty easy. If you don't it takes forever and things get broke. I wanted to salvage a couple of trim rings and ports for spares, but they all came out in pieces. After 22 years, I guess they had enough. I did manage to save one trim ring. and four screens
