My boat doesn't have a battery installed and we will be picking one up when we get back from Annapolis.

What should I do? I can get two 6V batteries and connect them in series or I can get a pair of 12V and connect them in parallel.

I am thinking that two 12V batteries will give me more power I can use (I will be swapping out all incandescent bulbs for LED and then about the only thing running any appreciable power will be the stereo and the bilge pump.

Who does what and why?

Mr. Mac;

You can add two batteries but suggest that you use 12 volt deep cycle group 24 size and attach to a battery selector. You will run the hot/red or plus side two wires of course to the battery selector. As for the negative wires, you can run one black of course attached to the negative over to the other negative and then run it to your electrical panel.

As for the battery selector, make sure that it has a quick field disconnect in the circuitry.
