I have a Hunter 310 which Anchor Sails. As the wind increases the sailing angle can be as much as 135 degrees in 30 + Knots. I would like to know how to control this

Check the archives as there are quite a number of threads on this subject. The biggest problem associated with it is dragging anchor and we reacted by ugrading our ground tackle with a 35# hinged plow COR anchor and longer and heavier chain.

There are a lot of things you can do to try and reduce it somewhat, but the only way you can eliminate it is to anchor by the stern. Otherwise you're fighting a fluid dynamics battle that you will ultimately lose. I've posted more detailed info in many of the numerous other threads addressing this issue.

I recommend the FinDelta#2 by Banner Bay and a Fortress FX anchor (one size larger that required, too much chain may work against you on the right bottom). Works great for me! BTW...FinDelta works much better in strong winds if you close the added grommets with a piece of line tied around the boom (I was very surprised). https://www.bannerbaymarine.com/store/
