I'm looking for recommendations on a portable air conditioner. i have a hunter 28 in texas, looking to stay cool.

Window units work in the companionway. You can get what I call a "lugable" which sits in a hatch. The best answer is a central A/C unit.
a little central unit would be best, but a 6000 BTU or so window unit in the companionway does a pretty good job. The downside is that the hot air (and noise) blows in the cockpit, making sitting there for a sundowner a struggle.. The hatch mounted ones are pretty good but they are expensive for what they are. They do get the noise and hot air out of the cockpit. AC in hatch can been seen for sale used in Craigslist and do not where but have seen
them for sale many different places.

Have used all of them including a water cooled unit in a Samsonite suitcase and a portable with a 4" hot air exhaust hose. For a boat your size I would recommend the hatch mounted unit (I forget the brand name). It is pricier than a window unit but the convenience of having it away from the companionway is priceless. The built in units are expensive and the portable units too inefficient.
I would look into a 10k btu 2 duct portable unit. They have been bashed on here for years but the 2 ducts are the way to go on a boat. I have the single duct unit that is semi- permanently installed in my locker. It's a single duct but I have it installed like a 2 duct. I have an air suction hose from a port feeding air to my enclosed locker. I also have an exhaust hose blowing out the same port. This way it's not using condition air and sucking in hot air throughout the boat. It works pretty darn good and can run off my portable generator.
