I have a 2002 Hunter 356 I recently replaced the female side of the shore power cable (that which plugs into boat), because it showed signs of burning (overheating). I noticed today my new plug also shows signs of burning Tomorrow I am going to remove the plug from the boat to see what is going on Anyone have any suggestions?

John, It seems only reasonable that if one part was too hot the other side was too hot also. The usual cause is corrosion and/or wear. Now that you have replaced the female end, and after inspection feel reasonably sure that there is no real damage on the male side, clean it completely and try it for a short (hours, not days) time and look for overheating. If all appears well keep watching over days. At the first sign of melting, overheateing or discoloration replace the male end on the boat and discard your power cord.

Does your powersource...

...have a circuit breaker? I have a power pedestal at my slip with a circuit breaker. I follow the advice I was given long ago and plug my power cable in with the circuit breaker switches OFF. I only switch the ON with the connector plugged in. That way, there is no arcing as you plug the powercord into your boat.
