We have navigational instruments on our Hunter 23 for depth, speed & wind direction that have 5 pin cables. Some creep broke into the boat to steal electronics and other belongings. The cables for our navigational instruments were cut. Does anyone know if the 5 pin cables that were spliced can be reconnected and actually work properly again?

I have a Raymarine St-60 wind meter. Since i have to unstep the mast every year, I have cut the cable at the bottom of the mast and installed a connector. I soldered the connections on both sides of the connector, and insulated each wire with heat shrink. Works great. Don't know your brand so I can't promise that it will work for you but I most certainly would try it.
The cables can be easily spliced. Some wind instruments actually include a terminal box for installation for dis/re-connection for mast removal. I would splice inside the boat at a easily acessible location.
If it is a 5 pin, most likely a Raymarine unit or similar. 1 wire = 8v DC, 2 wires = port/starboard, 2 wires = bow/stern, shield = ground. No high frequency signal to speak of. Yes most boat has a terminal at the mast base to disconnect for winter mast stepping.
