Every time I wash out the cockpit, I get water coming into the aft cabin just underneath the teak panel along the aft. The water accumulates in a trough next to the mattress.
I have removed the fiber glass panel that covers the steering mechanism and put sealant around the fittings.
Am I missing something?

Albeit a different boat, I had a similar problem traced to the rubber guard for the transom hull/deck joint immediately aft of the aft cleat. Recaulked and leak stopped.

Screws

Any screw that penetrates the floor or sides of the cockpit (or the deck for that matter) is a potential source of leaks. Back them out, apply some sealer and re-install.

don't wash the cockpit :-D

or get the first mate to and you watch from the cabin to find the leak.
tallcum powder is handy to spread around. It gets moved when a water trace goes through it but will stick to the vertical surfaces.

I had water leaking in from the base of the arch where it meets the cockpit. The water would drip down the base of the arch and down the side wall of the aft cabin. I caulked it with 4200 and the water stopped.
