Stan, remove the gauge, and cover it with a round piece of cutting board material, holding it on with a little sealer. The board is 2 bucks at walmart, and you could remove it later when/if you find an instrument you like, without recutting the hole.
Or a round piece of teak with the outer edge routed round.

That sounds a lot cheaper than the $30 poly wood panels at the boat shop!
