Your results mirror mine. I installed cowl vents and computer fans run on a dedicated solar panel ten years ago and the inside of the boat is always fresh and clean smelling.
Fungi will grow wherever they can find a food source and enough moisture. The ventilation keeps the moisture levels below the needs for fungus growth. We are never far from fungus spores. The air is full of them all of the time. They have very specific needs for growth.

I ditto the comments re the vents. I did something similar on my Catalina 30 and never an odor when I open up for the first time on the weekend.

Nice job, David, and nice boat. It's not so much talking to sailors like Rob and Ross which in intself is great, but it IS reading the West Marine Catalog Advisors. Really. There is such a load of knowledge there for free that I find it amazing when people ask how batteries get charged, how to ventilate boats, how to anchor. You don't even need to buy a book, it's all there for free. Get two, one for home and one for the boat. Oh, yeah, they're available online, with even better DIY information that doesn't appear in the written catalogs. FREE, hermit,are ya listening???
After about two years I realized that the space under the vee berth wasn't ventilated at all. I cut two holes with a holesaw and installed a small fan (2x2 inch) over one of them and connected it to the solar supply for the other fans. Ventilates the space and the lockers on either side. It doesn't take a whole lot to make a big change.
In addition to the powered vents, I use a small desk top fan running off shore power just to make sure the air is constantly "moving". Of course maike certaiin other things are taken care of such as a bone dry bilge and cushions.
By happenstance while driving around I found a west marine in San Antonio. why one would be here, I don't know. I drove by the San Antonio west marine. I got there just after closing. We went to Corpus, went to west marine and low and behold, they are out of catalogs!
Maybe I am not menat to have one?
