The steel mesh hose's fitting on this quick connect failed (I think it's a Whale fitting). It is from the water heater. I cannot figure out at all how to disconnect this so I can replace the T-connector. Any ideas? I've checked online and am coming up empty.

...And if anyone has a similar set up: is it Whale? Aqualock?

Hold that little gray bit against the beige bit. When the gray part comes away from the beige part it grabs the pipe. When you hold the gray part close to the beige part it should release so you can take the fitting apart. It might still take some pushing back and forth.
Thanks! I'll try it.

Sometimes there is a collar inserted between the grey and beige parts that prevent it from coming off. I can't tell in the picture, but is that thin round beige part at the top of the fitting a part of the lower fitting, or is it removable?

That dark grey fitting is a no name Chinese fitting. They are all over Amazon. The white ones look like Whale fittings. THe dark grey fittings are a real pain in the ass to disconnect. It can take quite a lot of force sometimes to compress that darker ring back against the fitting to get it to release. I have recently destroyed a couple having to resort to pliers.
