Correct, Jim.. in the rice country (west of the Miss River) many of the farmers are raising crawfish in the rice fields before planting rice. A second cash crop with very little investment.. These guys are working a pond, but the shallow flooded fields that are used for rice are ideal for the bugs.. YUM ..

every spring we'd ship a hundred pounds or so to Annapolis then me and another Louisiana boy would go up and cook 'em for the party.. Great fun..

You can ship them down here . Love me some hot and spicy Crawfish with a some ice cold Dixie beers.

Guess I'm starting to show my age. Didn't know Dixie was gone. never could get it in South Florida. Just good memories of gorging on bugs and beer in the bayou.
