I have purchased a deck organizer to install on a MacGregor 26S the next time I have the mast down. After installation, when I raise the mast again, will the added height be enough that I should be prepared to readjust the shrouds/stays?

that depends on how finely tuned it is before you installed the plate... you can walk thru almost any public marina and you will see most boats under 30ft that the rigging is in need of tuning... so it really depends on how picky you are.
its a small amount of elevation change so it may not make a noticeable difference other than the rake of the mast by an inch or so... tighten the forestay a bit more and it will probably be better than it is right now.
