I purchased a kickup rudder and tiller from Ruddercraft for my ODay 25 two seasons ago. The rudder kicks up easily for crab pots and groundings and resets. The rudder works well. I see now that Ruddercraft has a 'blue water' version that was not available when I purchased mine. This looks like a good option to consider.
If your rudder is causing too much weather helm it's because it needs to go in toward the keel a little bit. I think that you're going to have to experiment with it some how and find that sweet spot.
I can only tell you that we're talking increments of a fraction of an inch. I know from past experiences my tiller would pick up a lot of weather helm if the rudder blade slipped up about a half of an inch.
