Which is the right position for the dry/wet valve?

Peggy, you answered this once before and I forgot to write this down. Do I keep the valve in the dry or wet position when winterizing? I left it in the wrong position and the gasket got deformed. I have a written procedure for wintering which I created and I want to add this to it. Please state this one more time for me...!

Leave it in the wet mode

And leave ALL seacocks open while on the hard. Better yet, don't worry about it and just replace the toilet next spring with one of decent quality that won't be damaged by antifreeze and it won't matter whether you leave it in the wet mode or dry mode. Speaking of winterizing...don't forget to add: THOROUGHLY flush out the holding tank before adding antifreeze

which toilet would your recommend?

I have a jabsco small bowl. Jabsco seems to need a lot of repairs and parts are expensive.

My choice would be the Raritan PH II

About $100 more than a Jabsco, but rated the best manual toilet under $500 for a couple of decades. Keep it lubricated, rebuild it about every 5-6 years and it'll still be working a LOT better 20 years from now than even a brand new Jabsco. If the PH II won't fit in your head, the PHC...which is the same pump, but on a compact base to fit in the same space as a compact toilet. However, finding info on the PHC can be a challenge, so you'll prob'ly have to contact Raritan directly for the dimensions.
