Your rating would probably be 180 - 183. Are you shoal or deep draft? Fixed or folding/feathering prop? Check out the PHRF Chesapeake site. There are two Hunter 31's listed with fixed prop and furler above deck. One is a shoal draft.

Check out the US Sailing web site. They have a PDF file on any boat you are interested in for a base, high and low PHRF number
I have an 86 H31 right across Willoughby Bay at the Norfolk Naval Station and just happened to check the PHRF rating for the boat at the Club meeting last night.
Range is 159 to 177 with an average of 165. Suggest you use 165 until you have an official rating if you don't already.
