One of the problems of buying a used boat is you often don't have a dealer to help you learn all the systems. In my case, I also did not have an owner in-state to orient me to the boat.

I read the manuals that came with the boat, and it talks about being able to switch from one fresh water tank to the other at the manifold....but there was no diagram.

Attached is a picture of what I think they're talking about, and if so, it looks like one tank is "off", one is "on", and one isn't hooked up.

Am I seeing this correctly?

Yup, that's exactly right. On mine the forward most valve is forward tank and rear (middle for you) is rear tank.

One trick I learned when changing is that it takes a while for the water to get thru the system from the new tank after switching, and the old tank valve has to be closed. So to switch I turn off pump, close the empty one, open the full, then open all faucets, turn on pump and let it sputter until flow is restored, then close the faucets and let pressure build with pump on.
