Water-proofing deck hardware

I'm planning to remove the deck hardware on my '78 Catalina 30, to seal up the holes where the screws/bolts are, to prevent further water infiltration. (The windows will be another job.) Does anyone have advice on any particular sealant or technique that works well? Anything to avoid doing? Thanks for any helpful tips.
