Have no idea how to open / close the valves that isolate hot and cold supplies to various points on my H356. Valve manifold is under the sink in the galley, there are what apprear to be a row of 1/4 turn valves, even a kay that fits what I assume to be the stem. BUT, valves will not turn and am afraid to apply more force as am sure to snap off the diamond shaped stem. Am I missing something here? Do these things turn or is operation accomplish in some other manner?

NOPE!

You have it right. This is another example of why you want to "work" your valves and thru hulls regularly. It happens. Thy this. Take some penetrating oil and with the pressure water pump turned off, squirt a little down each stem. Work the stem back and forth. A small amount at first. Every time you work it a little oil will make it farther into the valve and you can take turn it farther. You should be able to "work" the valve free. Be sure to come completely back to your starting point each time. This is important as this is how the oil gets to the freshly expose parts. If you have ever tried to get a rusted bolt out it is the same process. A little forward, all the way back, a little more forward, all the way back. Ain't boats fun!?
