That's a good idea. You can also buy an HDPE (?) cutting board and use the material instead. It will be match the faucet and sink and zero maintenance.
I think I may go to a 12V faucet this time.
I may be wrong but faucets are either 4" or 8" on center or just a single hole mount. No need to buy a "marine" faucet for 4 times the price. I got a nice 8" on center faucet with 6' pull out sprayer for $30 on Ebay. Your water pump turns on when it senses loss of pressure. Nothing magical going on with a marine faucet.
Try your neighbourhood RV dealer. Should be cheaper there than West Marine. Hopefully, there's no salt water in the boat so, regular RV/trailer stuff should work.
This should apply to sinks, stoves, cushions, internal paints/varnishes as well.
