Varnish over epoxy

I replaced the transom on my old Achilles inflatable. I coated it with epoxy first and then varnished it for UV protection. How many coats of varnish should I do over the epoxy?

Here is the WEST System's recommended method of using varnish over epoxy. I have used this technique and am quite happy with the results.
