How much stability do the V berth bulkheads provide? Can they be removed? Are they just for keeping the V berth separate from the head area or are they structural?

I can't answer your question about the need of that particular bulkhead but if you do undertake that job, I would love to see pictures.Yes 25/26 O'day, and yes they are there for a reason but is it stability?
The main bulkheads are obviously there for support, including the mast step.
Here's my problem... I started with a Precision 18, Precision 23, then to the O'day 26, each in an attempt to get more overnight room. Thing is, there are more sections as the boats get bigger but not really more overall room in an area.
From the 18 to the 26 there is more volume, I can almost stand up and there is much less moving stuff around to sleep but it's really broken up into 3 sections, none of them any larger than the one section of the 18 as far as sleeping goes.
I really don't need the second sink (never use it), the potty could go under the v berth and pull out. If I removed the v berth bulkhead, I could fit a real double bed mattress in there for my wife and I if I extend that area.
Just in the "thinking" stages.
