I became the proud owner of a 2000 250K several months ago. The boat needs to get out of the cold climate of Lake Tahoe ASAP. The trailer should arrive shortly. I have never made a sailboat ready for travel. Is there a written protocol that you can refer me to? I took down the main sail and boom and secured them in the cabin. I am mostly worried about the jib and the self furling mechanism. Can someone advise me on that step? Does the sail come off first? or is taken down all together with the forestay?

The jib should be removed before you lower the mast. This way you can store the sail in a dry comfortable temperature. If you go to the Catalina 250 association web site you can print the owners manual for your catalina for step by step mast lowering instructions.
