Towing a C25

I am wanting to pick up the hobby of sailing and was wondering if it is safe to tow a Catalina 25 1,200+ miles? I've got a Chevy Suburban with a towing package. Also, is a C25 too large to be launching and sailing on the weekends?

Yes, it is safe to tow assuming that the trailer has working lights and brakes and that you drive defensively. You won't need any permits or anything. As for launching each weekend the biggest issue is whether or not you have to step the mast. If you have to step the mast it is a two man job and will take about two hours to step, rig and launch. I've heard about some who step the mast alone, even on a 27' boat, but they rigged up block and tackle, etc.

I tow regularly to the San Juan Islands

I tow my 25' every year to the San Juan Islands and this year to Desolation Sound, BC. I have used a 1978 Suburban 1500 with extra springs until this year when I borrowed a different truck. I usually tow 350 miles one way, this year it was 450 miles one way. I sail for at least 3 weeks each trip, usually only 1 trip per year.
