One of two things is gonna happen...
You'll either have no odor when you get back because you haven't added any new sewage to the tank since treating it when you left...or...it's gonna stink
If you know you're gonna be away from the boat for more than a week, your best bet will be to pump and rinse the tank, and then treat. People tell me that when they do that, they have no odor when they return.
