I started out on my first sailboat with a tiller. This is the best way to learn sailing.
I moved up to a C30 with an Edson wheel. First thing I noticed was losing tiller-type sensitivity. Tillers give immediate feel to the rudder & any weather helm. But, I got over it quickly.
I sail on my friend's tiller boat a lot, but now being spoiled by a wheel, would never buy a tiller again. I know I'm gonna take a lot of flack for saying this, but that's OK. All sailors have personal preferences & none fit all. Mixed fruits for mixed nuts.
One upside I find to having a wheel, is in weather conditions. Yea, there's this big pedestal, but the area in front is free. You won't miss having to ask your guests to "please move clear of the tiller, thank you". In more heeled conditions I find it easier to steady myself with a wheel. The extra handrail also helps to steady you. I also never liked sitting facing sideways to the bow for steering.
Another advantage is a cleaner installation for an autopilot. I was in a few bad storms back then. Once the tiller strap broke, another time the tiller itself snapped at the throat. It was this that cured me.
These are just some of my personal thoughts. A tiller will teach you sailing, a wheel will make it nice.
