Can you clarify if you are replacing only the transducer insert, or the entire through hull body? If the through hull, I'd wait for a winter project. If only the transducer, most of the modern ones (25 years) had built in automatic seals that cut off the water after a cup or so fountains in. Even without a cutoff, you can do a switch if you're quick and have the replacement handy. The fountain is scary, but doesn't have much water pressure. You also probably have a dummy transducer to put in its place. You'll need the exact model, of course , to fit hour through hull. If you want to be doubly safe, try swimming to the outside, finding the fitting by touch, and covering it with the head of a plumbers helper (plunger), with some air trapped in it. Amazing how well those things adhere to a boat.
