While under power stern is too low in water, so low exhaust is under water, fine when sitting or sailing. My first though was that I was taking on water but everywhere was dry. Any ideas?

It's not an issue. Catalina 30s, 34s and 36s are all like that. My boat is 26 years old, never had a problem. The exhaust hose goes very high inside the boat before it goes down to the muffler. Some C30 skippers have bought outlets with flapper covers on them from Catalina Direct.

............................... it's a non issue. Our Hunter 310 has the exhaust underwater when the boat is not moving. As Stu has mentioned on his boat, and mine's the same, the wet exhaust has an internal loop of about one meter rise in it before it heads back to the muffler.

The rise has no effect on the engine and it's dead silent when standing beside the boat.
