I pulled the liner out of my ice box, piece by piece, but left the outter shell because it was glassed in and I was putting in a shelf to hold the new ice box. I've also pulled out and replaced the back splash in the galley that separates the galley from the aft part of the boat. I would say that if you pull the cabinets, and the whole galley out, you can put in another aft berth, but you might want to also put in a new bulkhead under the cockpit floor behind the steps, straddling the motor. I've had some flexing on mine during a good blow and I'm going to beef things up next time I'm in there. There's a couple of photos somewhere in this tangle of threads, where they tore out everything to start over, and the photos were great, but good luck finding them, I think they're in the hunter modifications h37c area.
Don't work on it too much and turn into someone like me who's worked way too much on it and hasn't gone sailing nearly enough. I guess the trick is doing just enough to be safe and comfortable, then get out there....
