Wow. That'd be a bit big for a Catalina 27. But it'd certainly be an interesting install. 
Based on the Navistar (Ford) 7.3 that enjoys a good reputation. So the base engine parts should be available. The StarPower parts may very well be complete unobtanium.
But I'm a sailor. I'm not an export on powerboat stuff.. You may wish to ask on a powerboat forum.
