Single handing is easy.
Assuming you can fix the tiller or use an autopilot. Just go slow and think through the process. Start with just the main up then once you have all the tack and jibe worked out hoist the smallest jib you have and go for it. Then move up in jib size till you are hoisting the asymetric.
