Setup for single-handed sailing?

I have a '97 C-250, wing keel, that I'd like to be able to single-hand. The winches for the jib sheets are mounted on the cabin top, which makes it "exciting" to try and tack without two people. I do have an auto pilot, which "knows" how to tack, but I'm just not comfortable getting that far away from the tiller. I've heard of people mounting a second set of winches the side of the cockpit, but I can't see any practical way to route the jibsheets. If anyone has actually done this I'd really like to see a photo or two showing how it's set up.

Adding Coaming Winches on the c250

There are two ways to route the jib sheets to handle the lead angle to coaming winches. My method was to add rub bars to the cabin corner and then a block on the midship stanchion. Another method is to use two blocks on the mid ship stanchion, one on the forward leg and one on the aft leg. The aft leg block protrudes inboard as does mine and the forward block protrudes outboard. See the link
