As you furl, the line on the drum builds up
to have some line left on the drum when your largest sail is fully deployed
You have that backwards. As you furl the line is stripped from the drum and the effective diameter decreases. When the sail is fully deployed, i.e., set, the amount of line on the drum is at its maximum.

My rigger stripped the forward half of the furling line, so it had plenty of space to wind on the drum, but the section in the cockpit was a good size to work with. Well worth his time/$$.
