I have a 1993 Hunter Legend 35.5 and I would like to refinish the Teak and Holly interior floor. How much should I sand it and with what size sandpaper, then what finish do I apply. Thanks

Sand very very little. The teak and holly is a very thin 1/16" or less veneer. Use a sharp scraper and a heat gun to remove the existing finish, then very lightly sand with a fine 220 or higher paper with a sanding block.

You will get a million answers on the finish.

As above, the Teak & Holly is just a thin veneer on plywood. If the finish now is just scuffed without bare spots, then I'd suggest a very light sanding with 220 wet & dry and refinishing with the same stuff they use on gym or basketball floors.
If the finish is worn through in places it is possible to clean those areas to match the rest and feather in the current finish. I've used the above method and caution is the watch word as you certainly don't want to burn the wood. Perhaps you can pick up an old piece of that type of flooring at a boat yard that repairs or builds yachts and practice on that.

Veneer for sure. I'd be thinking of it as being the thickness of a piece of copy paper. 220 is fine, but I tend to err on the side of 320 when refinishing these sailboat veneers. I would also keep my expectations in check by not attempting to eliminate any gouges or imperfections. Rough it up with the light sandpaper just enough to create a tooth for the finish, and accept somewhat of a patina in your results. So, freshen it up, but like new when done?....uh, uh.

Finished the sole on my 1988 hunter 33.5 many years ago. Sanded lightly with 220/320, vacuumed, wiped with tack cloth, wiped thoroughly with acetone in well ventilated cabin. I used Daly’s Profin sealer, thinning first coat about 40% & second coat about 20% for good penetration of sealer. ultra light hand sanding with 320 between coats, vacuuming with a brush, a wiping with tack cloth. Applied 6 to 8 coats. Dispense enough sealer in a separate container ,to minimize contamination of the quart can of sealer with dust particles from the brush. Used extra fine bronze wool following final coat to smooth & knock down gloss. Was very pleased with results; really dressed up appearance of cabin. As others have mentioned, don’t be aggressive with sanding to prevent damaging the veneer.

Yes to al, of the above but I used a stripper (not that kind gentlemen) to remove the previous finish then sand as described above. Came out great!
