Had a guy look at my shift/throttle cable replacement project today. After
remove compass etc., and got good look he said would have to remove entire pedestal assembly
to replace which would be around four hour job ( at $ 90.00 per). Guess I
could contact Edson but has anyone on the list had to do this job yet?

I have not had to change my cables, though that is on my to-do list.
I have had to re-attach the steering chain mechanism to the wheel spindle, which was probably a similar job. I had to remove the compass, disassemble the pedestal, as well as the access covers below deck.
It did not take four hours. Maybe two. And I did it while on a mooring while I was out cruising for the weekend.
I possess only the most basic of mechanical abilities, but it was a fairly easy job. I'll have no problem doing it myself when it comes time to change the cables.
