unless you have a good hand on woodwork, tapers and a place to lay it all out, make patterns in 3D....it is not something I would jump in to.
With the number of boats for sale, this could be in the deal breaker category.
Cost of materials is quite high (if you use the good stuff), removal of cabinets and such is a chore. Can be done mind you, several decent jobs as shown in the after pics are available here while the job varied from a full blown cabinet shop to a DIYer. OK results can be had with the faux-teaks and even some box store flooring, if only for a while.
Cost of labor, to have someone else do it, is even higher. See show stopper above.
At a minimum, you would need to have a table saw, routers, sanders and some skill with each.
