Need to replace cutless bearing, but unable get the prop shaft out of the transmission coupling on Hunter 30. Tried WD40 in set screw holes and around the shaft. Any suggestions?

Then don't.
Your boat would appear to be old enough not to have one of the thin walled SRBP cutlesses but to have a nice sturdy 1/8" thick wall bearing.

I ferreted around and found an old cutless of the same size (2" OD 1" bore 4" long). Then I hacksawed a 1" wide piece out of it as per the attached photo. I gently squeezed it in a vice to very slightly reduce its diameter.

Next I took the prop off.

Then it was only a matter of digging away the antifouling over the two grub screws holding the worn one in the 'P' bracket and slipping the cut old one on to the shaft and simply laying the head of a hammer on the shaft and sliding it down to strike the bearing. The bearing came out easily enough without needing to apply too much weight to the hammer blows. If it had resisted me the I would have held a weight against the strut to absorb the blows.

I did mine at 05:00 hrs one morning at low water in a distant port whilst on holiday.

Best way to remove the coupler is to use the mounting flange bolts as a press. Remove set screws and loosen the flange bolts and separate enough to insert a loose nut between the shaft ends. Then reinstall the flange bolts and tighten evenly and slowly. The nut inside with push the prop shaft out of the flange. You will more than likely need to reset a couple times but once it's moving it will get easier. Good luck with your repair.

WrenchBender has it right- you may need a set of longer bolts to reach when you have the nut in as a spacer. I have also found a socket of just the right dia works instead of a nut.

After removing the coupling, you have think about putting it back. Understand it can be real pain if you don't know how. If its difficult to get out, it'll be hell to get it back in.
Make sure you know how to get it in before you start taking out.
