relocation of jib sheets

I have a 1999 Hunter 310. I would like to install a set of winches in the cockpit behind the fiberglass arch. I believe these spots are intended for spinniker winches but I would use them for the jib sheets. Does anyone have any experience with such a project? Specifically how and where to mount another jib track and car, as well as the blocks used to route the jib sheets to the new winches.
All advice is appreciated.

I can't help with the install but what you are planning to do is what I have on my new 36.
You most likely have the jib tracks on the cabin roof and mine are outside
on where the life line bottom's are mounted.
I fine using the rear winch's for the jib makes it so easy to adjust for me from the cockpit and really hardly ever use the blocks for the lines I just leave them rapped around the winch.

Thank you Nick. The photos are very helpful. Yes my jib track is on the cabin top. I think I can mount another below it in a similar location to yours. Then I just have to get around the fiberglass arch to the winches The whole idea is to make it better to single hand.
