Refinishing the teak and holly sole.

I am looking at refinishing the sole on a Hunter 28.5. I guess one would strip the old urethane finish first, then carefully sand (it is veneer after all). Next I wonder which finish to use?
I also would like to refinish the table and chart table, but again wonder which finish might best match a 1986 boat? Any suggestions would be appreciated.

I did my table in polyurethane (7 coats) and it has a very high sheen and has lasted 3 years getting dripped on by a mast leak with no ill effects.
Used the coat and lightly sand with sanding block and 220 grit to get a flat surface, repeat, method.

Right, I used urethane stripper (from Home Depot), lightly sanded (more sanding in some spots), and then i put 3 coats of urethane back on, more would be better, but I was impatient. The pic is a before, and after stripping, just rinsing with water. You can see how the board came back.

I really like the Epifanes products. I recently replaced the cabin sole in my 29.5. I used 6 coats of the Wood finish gloss followed by 4 coats of the wood finish matte varnish. I wanted a matte final look to help hide the unavoidable scratches from our dogs. The gloss alone looks very nice as well. I have used these on my 1932 Old Town Canoe as well and found them to be very durable, easy to work with, and look awesome. Good luck on this project. It's a great way to spruce up the interior!

Sole replacement

If someone wanted to replace the bilge hatch and forward hatch in the sole where would one go to find materials?
