Raymarine ST60 Depth Instrument Errors

I have recently purchased a Hunter 36 and have found that the ST60 depth unit only works when in depths greater than approximately 7-10 feet. When it is really needed it either displays --- or Last depth 7 ft.
It is currently set with with a depth offset of W/L +2.0 feet.

Questions:
1) what should be the keel offset for the Hunter 36?
2) Does the unit act as described above when the measured depth is less than the minimum depth entered into the unit?

Should work at all depths. You might want to send your head unit into Raymarine and have them check it out.

Have you considered simply changing it and seeing what happens? Do you have a manual? They are available online, IIRC.

+2 offset means the transducer is 2 feet under water which is probably correct. so it measures 10 ft between it and the bottom and displays 12 ft depth of water. Can't answer your question on what the offset should be till we know where the transducer is. I would suspect the transducer has some fouling on it if it is giving "---" in the thin water. Fouling disperses the sonar beam and you get so much return in the shallows that it can not figure out which return is the correct one.
