I have a Catalina 1995 Catalina 30. I believe that the holding tank is original but not sure. For the past month when I have gone on the boat after a few days there is dirty water from the head in the bilge. I have checked all the hoses and haven't found a leak. I have followed for the aft of the tank through the engine compartment and no signs on a trail. And it only seems to appear after sitting on the mooring for a few days.

Get the holding tank pumped out.

Stop using the head for a while and see if the problem continues. If it does you should replace the tank and many/all of the plumbing hoses unless you enjoy the aroma the poop in your bilge creates. If it does not stink then maybe the holding tank is not the culprit. Do you use K.O. as a holding tank treatment? It is recommended by Peggy I believe.

Prob'ly not from the head or the tank

The water in your bilge is most likely sea water from a weeping stuffing box, rain water, your icebox drain...some humdidity condensation... I get many calls each year from people who've replaced their entire sanitation systems--toilet, hoses and tanks--to get rid of what they thought was "head" odor, when all they really needed to do was clean their bilges and sumps...really CLEAN 'em for a change, and flush ALL the dirty water out, instead of only dumping in more detergent and/or bleach and letting the bilge pump do the rest. 'Cuz a wet dirty bilge is a "primordial soup" that can easily smell like a swamp or even a sewer, especially in hot weather. So I suggest that before you do anything else, you get out the scrub brush and/or a power washer and really CLEAN your bilges and sumps. I'll bet it'll solve your problem.
