I'm betting that they have never been produced for your boat. But that's OK.
Polars are MUCH more useful downwind, with a spinnaker. Upwind, most boats react the same. Unless the breeze is very light, trim for close hauled and steer to your telltails. You will not be more then 2 degrees off your polars, better than most instruments can rate.
Downwind a much bigger deal and handy to have, but only if you are using an symmetrical spinnaker.

No polars available for any Hunter that I know about. This subject has been asked too many times to remember.
I found a link on how to create your own Polars. If you go through the trouble I would love a copy as I have a 1983 Hunter 31 Shoal Draft Keel.
