Our brand new Hunter 36 has what looks like a nick (discoloration and indentation) on the chrome (or is it stainless) handle on the top of the pedestal in cockpit and also found another on the metal bar running above the cockpit table. I tried using the metal polish that came with the boat. It seemed to take some of the the darker color away but the hole is still there. Looks as if maybe someones ring or other metal knocked against it and took off some coating. Are these metals in the cockpit really that delicate? Are they simply coated with this nice shiny stuff that chips off in a month!!! Any answers or suggestion on how to repair?

Nope, it's not a coating, that's stainless tubing and should be pretty tough stuff. I seriously doubt a ring nicked it. Winch handle yes, ring no. More than likely it can be easily polished out with the right equipment. It will take more than hand rubbing with some compound however.

Ah...the joys of boat ownership. Understand your pride with a new boat, but don't let the blemishes take away the fun. Boats left in the water are going to get nicked, tarnished, dull, broken, torn, ripped, you name it. Find the products that work for you and help keep the boat looking good. Remember, a well maintained boat - even after 30 years sometimes looks better than those coming off the production line. That's your challenge now. Have fun doing it.

Well, it kinda looks like a surface defect in the stainless tube. I have had good luck polishing plain stainless hex bolt heads with some Ryobi polishing compound that I purchased at Home Depot. The polishing compound comes in a stick (part number A01AG15) and it is for buffing stainless steel and other hard metals. The buffing kit I bought is a Ryobi 8-piece mini kit (part number A01AG08) and the buffing wheels chuck into an electric drill. Polishing the stainless steel fastners was quick and easy. This might work for you.
