Unlikely you'll find a single source for everythin
'Cuz everything on a boat except the hull is supplied by various equipment mfrs. Many of the ones who supplied them to boatbuilders 14-25 years ago are either out of business by now or were bought by other companies, so even a list of the brand names may be useless. You MIGHT still be able to get wiring and plumbing diagrams from Hunter. Canvas and cushions can be made locally. The rest--bilge pumps, water pumps, toilets, holding tanks, electronics, hatches, sails, rigging etc--you'll have to research and choose the ones you need for that boat. Restoring an old boat is a lot like restoring an old house. Unless it's to be a museum, you don't want to re-create the original, but update everything in it to current state of the art and standards (especially standards). If you do it right, you're about to embark a learning curve that will teach you far more than 99% of the owners of newer boats will ever begin to know about their boats.
